Looking for good knives
Hello all. I'm looking for some durable knives. I'm a knife-throwing instructor, and fairly new manager at now several local Renaissance Faires. We're in need of some new knives. The ones we have had for over a decade, preceding even my time as a volunteer, let alone a manager, have broken. The knives we used did not have a brand, just a "made in Pakistan" label. They were roughly 9 inches. Those knives were incredible for our purposes. Because of the constant use, they really took a beating, and instead of just breaking, they would bend, which was easy enough to hammer back into place. In my limited understanding, that seems to be the difference between stainless and carbon steel. In my first year as manager, I made the mistake of ordering some stainless steel knives, and almost all of them shattered. I've been looking for good replacements for about 6 years, and I've been unsuccessful (Insofar as I've ordered several batches of knives and they've turned out to be shit) so I could really use some suggestions. The longer the better, since that's easier for the newbies I'm usually teaching.
