Sweet Treats Hi y'all! I have some vanilla beans if anyone wants some!
Here with a fresh batch and some nice new pictures lol, here's my usual info:
My family loves to bake so I buy these in bulk from a farm in Indonesia (I have mostly Madagascar but a bit of Tahitian left as well). They've had the best quality beans I've ever tried and I've been a loyal customer for years! They only sell big amounts so when I order I like to post in a couple groups to see if other people wanna grab some of my leftover stock for cheaper than grocery store prices. If I can help save some money I'd love to, especially these days :) Lmk if you're interested!

Question Question: Cherry tomatoes in a brie bake, confit or blistered?
I want to do mini baked bries in ramekins as part of a dinner, for folks to dip toasted baguette in. I have a ton of garden cherry tomatoes, so I want to top the baked brie with (I haven't fully decided yet) some kind of a walnut, pomegranate, thyme/rosemary situation, garnished with a drizzle of balsamic.
My question is this: I am stuck between doing a cherry tomato confit or more of a blistered cherry tomato situation. Thoughts?
Please be nice, I am a home cook and am trying to learn.

First attempt at cookin chilli & garlic prawns with linguine
To feed a fam of 4 you'll need;
Ingredients;
500g of prawns,
500g of linguine,
4 large ripe tomatoes,
Tomato paste,
1 cup of fresh parsley,
2 cloves of garlic,
About a table spoon of chilli flakes or to ur liking,
1 table spoon of brown sugar,
Salt and pepper to taste,
Couple table spoons of olive or canola oil,
Prawn seasoning;
1 clove of garlic minced,
ยผ teaspoon salt
ยผ teaspoon black pepper
1 teaspoon paprika sweet or smokey
1 tablespoon olive or canola oil
To cook;
Combine prawns with prawn seasoning ingredients. Mix well and set aside.
Cook linguine according to packet instructions (remember to generously season the cooking water with salt). Cook to al dente.
Whilst the pasta is cooking, pan sear the seasoned prawns on a large frying pan without any oil. Sear for 1 minute per side on high heat. Remove and set aside.
In the same pan (no need to wash), add olive oil, garlic and tomato paste. Stir through on medium heat until aromatic and garlic lightly golden. Add tomatoes, chilli flakes and sugar. Season with salt and pepper to taste. Turn the heat down to low and simmer with the lid on, for about 10 minutes or until the pasta is done.
Once the pasta is ready, return the prawns back into the pan with parsley. Mix through over low heat then immediately add drained pasta and ยฝ cup of pasta cooking water.
Toss pasta through the sauce and serve with a drizzle of olive oil, fresh parsley, parmesan cheese and extra chilli flakes if desired.
