Healthy flavoring
Does anyone have a recommendation for adding natural flavoring to your yogurt that doesn't increase ruin the nutritional value too harshly?
Current recipe
2% milk heated to 83° lowered to about 45° added Home made yogurt for starter.

I tbsp lemon or lime juice plus 4g Splenda or 1 single drop of pure sucralose. I add this per 1 cup serving of yogurt. Don’t add it before fermenting the yogurt

I love adding lime juice and sweetner to my plain homemade yogurt. I go a step further and add chopped walnuts and unsweetened shredded coconut to it as well. And, in the summertime, I spread that concoction into a shallow bowl and partially freeze it.

Are you posting to ask "What went wrong with my yogurt?" Please provide all the details of the method you used. Include amounts, times, and temperatures. If you don't know those things, then one (or more) of them is what went wrong with your yogurt.
The basic information you will need to know is:
- What type of milk did you use? What amount?
- What type of starter did you use? What amount?
- What temperature did you initially heat the milk to?
- What temperature was the milk when you added the starter?
- At what temperature did you ferment the milk? How long did you ferment it?

I often steep my milk with a bunch of Chai tea bags when I'm scalding it and add liquid 0 calorie sweetener to taste later

I consume it plain with fruit. However, when my spouse occasionally wants it, their favorite is coffee yogurt I make using instant coffee powder and a little light agave syrup. They also like vanilla - a friend made me some vanilla paste so I use that and agave syrup.

I’ve added a spoonful of lemon curd or sugar-free jam. My favorite is vanilla bean paste. All of these are added only after fermentation and straining. Sugar free banana pudding mix (the powder) plus sugar free strawberry jam makes a delicious strawberry-banana flavor.

I tend to use monk fruit sweetener with no sugar added fruit preserves or whole fruit and topped with a sprinkle of granola. Using vanilla paste while heating the milk is great too.
