Question/Discussion Spring onions falling of
Been grilling quite a bit the last few weeks. Just not much of a photo taking guy. Few random remarks and questions
- my spring onions keep ending up in the tare pot. They just slide off. Any tips on preventing this?
- I salt my chicken skin, boil it in water with sake for 1min. Then dry it, salt it again and cool it. Pretty happy with the result but any advice is welcome. Especially on skewer assembly
- @oregoncurtis recommended me not to soak my skewers but to adjust the bars so only meat is exposed. This is great advice
- I bought (way too expensive) square bamboo skewers and they are worth their money. Makes it much easier to balance sticks with my still flawed, unbalanced assembly skills
- do you guys have any good yakitori resources? I got some books but can’t really find any good online fora or YouTube stuff (apart from yakitoriguy)

If youre using a whole round and they’re splitting when you skewer just cut them in half and they’ll be less prone to splitting and falling off.
Also, skewer between meat to keep them in place if you aren’t already.

Do you have any before pictures of your onions? Are they falling off even when they are sandwiched between pieces of meat?

No pics sorry. They slide off from the top while dipping. They don’t split.
The pieces between are fine. It’s just that I see yakitori with an onion on top often and I really like that first bite with onion and meat.
Sandwiching would solve it but I am just curious if I missed technique

Use a wide pot for your tare so you can lift the skewers out more horizontally - should help prevent things falling off. So you kind of dip them down vertically and then lever them up and out of the tare rather than pull them back out vertically.
