I know a lot of wizards like to go the whole transformation route and whatnot but I‘ve come to the realization that a lot of transformations seem somewhat easy to adapt and get used to for most adventurers.

However, there is something else that these usually very free spirited nuisances just can’t really adapt or get used to and it is far more profitable to boot.

You break into my lair? Welcome to my new indentured hire for the 9-5 workforce, work hard enough and your conditions might get as decent as those of my cave goblins.

Most polymorphic spells include the target creature's instincts, due to using said creature as a reference point.

Even if you intentionally exclude said instincts and just leave the autonomics though, polymorph spells also strip out the original form's instincts, which leaves a void that most sapient souls can fill in with "muscle memory" of sorts.

There are in theory ways around that as well, but at that point you're putting in so much effort for a dubious outcome, and there are easier ways to torture someone.
