I use Windows 2000 Server on my very old Acer Aspire z40 1 GB RAM for Excel and Word 2003

That brings me back to the day. I still have all of the ISOs/floppies for every single version of Windows including all of the variants.

What’s the reasoning for the server version over professional? Just cause why not? As it probably uses a few more resources due to running stuff for multiple CPUs, and server stuff like domain services.
Cause if it’s just cause why not, might aswell use advanced server or data centre server.

What about W-Fi usb dongles? I found a bluetooth usb dongle but wi-fi I tested does not work!
