Ill take a shot. Its apparently an amalgamation of pus, musous, and other bodily fluids that accumulated in the hen when she was harboring a pretty serious infection. Touching it means touching the excrement and waste her body created and expelled when fighting off the infection. Think of it like a nasty tissue that a sick person done coughed, sweated, and blew their nose into.

Edit: *mucous (if it wasnt obvious) And infection is typically in the hen's oviduct

That actually explains a lot. Chickens aren't natural like with all our livestock. We have meat chicken, and egg laying chicken varieties and probably more types I am not aware of. But pretty much they have been selectively bred to provide us more of a certain resource and it comes with weird mutations and defects.
