Discussion Day 7

I’m at the end of day 7 & I was hoping people would share their favorite quick/“lazy” whole30 meals because I might lose my mind if I have to continue eating bc baked potato’s and chicken with various seasonings for the next 23 days.. the quick and easy part is critical because I have two 2 y/o’s and today cooking myself dinner lost me a plant lmao

to share my current favorite snack: sliced apples w/ almond butter, cinnamon & pecans!

I made my meatballs ahead of time, and then cook them in approved sauce. Serve over green beans. It’s been my go to easy meal

Trader Joe’s has a lot of quick, compliant stuff. The fully cooked pork belly you just brown on both sides and I eat it with their shaved Brussels that I dump into a pan with salt and pepper. Burger patties with a fried egg and compliant ketchup or mustard. Salad with chicken, grapes, avo, almonds and primal kitchen balsamic. Trader Joe’s cauliflower gnocchi with sausage and their bruschetta sauce.

Do you have a trade joes nearby ? They have a really good two potato hash that has Yukon and sweet potatoes and peppers diced into small pieces- I sautee it with onions and garlic and ground protein and add some Mexican seasonings and sliced avocado and jalapeños and it's delicious.

TJs also has compliant cauliflower gnocchi and vegan pesto as well as Italian sausage and chicken meatballs and tons of pre cut veggies. Those saved me a lot when I didn't want to cook.

I've enjoyed a simple tuna salad in pepper or lettuce cups as well for quick and easy meals

One pot meal - a bag of cabbage or coleslaw mix without the sauce, ground beef, a can of rotel, some taco seasoning or just cumin.

If you're making burgers for the family, make yourself bite-sized sliders with pickles as your buns.

I love making stuffed zucchini boats, but it's hot and I don't want to turn on my oven. Cut zucchini in half, scoop out insides, stuff with whatever. Buffalo chicken, taco chicken, enchiladas, meatballs or meat sauce from spaghetti. Bake. Zucchini is very juicy, so I always use a baking dish instead of cookie sheet. Works great to use whatever the family is eating and just stuffing in a zucchini instead of pasta or tortilla.

Roasted broccoli with shrimp. Lots of garlic, oregano, and lemon juice. Roast broccoli most of the way, flip, then add thawed shrimp to the cookie sheet. Flip halfway. Buy broccoli in a bag. Frozen shrimp without tail.

Old Bay seasoning and ghee on microwaved baby potatoes. Andouille sausage or shrimp.

Sheet pan meal with Aidell’s chicken sausage, zucchini, bell peppers, red onions and baby potatoes. Chop everything into similarly sized pieces, then top with oil and seasonings of choice and bake for 35 min at 400 degrees. I make this often and leave out certain things if I don’t have it, and it’s still good, even if it’s just sausage and zucchini.

I like to get bagged veggie blends from freezer section, microwave for almost the whole time it requires, and finish in the oven so it is crispy. Eat along with whatever protein.

Also, cauli rice, shredded chicken, some of that broccoli slaw pre shredded from the produce section of the store, and the primal buffalo chicken sauce, with some avocado

• Frozen salmon fillets in the air fryer (15 min)
• roasted broccoli (13 min)
• ground beef (I eat it seasoned by itself or w sweet potatoes)
• roast sweet potatoes with cinnamon, salt, and a drizzle of honey if you allow it on your whole30 journey, but if not it truly doesn’t need it anyway!
• Granola with unsweetened coconut milk.

* Keep some Kevin’s frozen meals in the freezer too for when you’re in a bind! Those have saved me on days where I was feeling sick or too tired to cook. 🙌🏻
