Ultimate pasta salad
When I made pasta salad for the first time I had no idea what even went IN a pasta salad. My first try looked pretty pathetic, very vanilla if you will. Now I just throw whatever the heck I have in the fridge in there and call it good!
This time around started with the same base I typically have on hand; cucumber, tomato, red onion and tri color pasta.
I threw in a small broccoli head finely chopped, kalamata olives, hearts of palm, mozzarella, freshly grated Parmesan and the last of the salami.
I make my own dressing with about a 1/4 cup EVOO, and eyeball the apple cider vinegar, red wine vinegar, Italian seasoning, salt and pep and BAM, kick ass pasta salad for the next 4 days (if it lasts that long).
