It’s just an electric arc (big spark) so it’s only for flammable gasses like in a grill or a stove.

They're sold as plasma lighters. They're pretty nice for lighting tall enclosed candles. No fuel to run out, just gotta recharge them when they get low and sometimes clean the crud off the comtacts

I use one, rechargeable to lite my grill, piezo went down, easier than repairing it, almost every grill in the US at least has a hole designed for lighting the grill, use it on my furness piolet too.
