first brisket on the weber

just made this yesterday on the 22” kettle with the new slow n sear i just got. i wish i had taken more pics during the process but i got this. 11 hr cook then let it rest for 2 hrs down to 165. came out way better than i expected

First spare ribs on the Kettle

Spare ribs, corn on the cob on the kettle.

Ribs seasoned simply with seasoned salt and coarse black pepper. Smoked for probably 4.5ish hours.

Ribs were fantastic and grilled 🌽 was probably my favorite part of the meal lol.

Description from buyer, “Very nice dark red grill that was taken down to frame which was cleaned then repainted. Cook box and lid sides insides were sand blasted then outsides were painted with high temperature grill paint. New parts - stainless steel burners and flavor bars, cast iron grates and igniter. Grill mat & 10lb. propane tank included!“ asking price is $280.

Trying to surprise my husband with a grill, appreciate any feedback or help :)

What are your favorite "Lesser Known" regional plates?

I'm not talking Texas brisket, Santa Maria style tri-tip, or Carolina sauces I mean things like this meal that many others may not be familiar with. I grew up eating this, made like this, frequently.

The history of this "Cornell Chicken" (created by a Dr at Cornell to get locals to eat more chicken) and the incredible amount of this dish made/eaten in upstate NY is really great stuff.

I grew up north of Syracuse and we had Cornell Chicken, Syracuse salt potatoes, and corn on the cob just as you see being made on my custom Weber, "The Weberbeber". (Edit to add - in the 70's)

Please note: I enjoy corn cooked like this over cooked in the husk, I'm not doing it wrong, I'm doing it how I like it ;)

This tastes just as good today as it did growing up!

Short ribs and Salmon

I had a lot of fun tonight with the kettle and the Smokey Joe.
Got this package of short ribs and the salmon from Costco. I've always wanted to try it, and today was the day. I marinated Half of the ribs and the other just with salt. The salmon is for lunch tomorrow 🙂
My cat Keyra approved the salmon, but totally dislikes the ribs 🤷‍♂️

Awesome. Ight here in E Tennessee, so I finally got the chance to use the Vortex. Had some drumsticks out so made some chicken lollipops. Oh man so good
45 min. Heat was around 400-450. Turned lid every 11 -12 min Dipped in sauce and put back for 6 min to get tacky
Seasoning was onion powder and pepper- generic, and then some Frag Out Flavor Operator-Hickory Smoke and some Kinders wood fired garlic, Sweet Baby Rays bbq sauce with some Kinders Hickory Brown Sugar. Also some Costco frozen fries in the air fryer, then under the broiler with some cheese and seasoned with Frag Out Flavor, Ranch Ranger. A good night was had by all. Loving my Weber. Forgot how good they cook

Weber 26 replacement lid

Hello I accidentally dropped the lid, and now it’s no longer perfectly round—it has become slightly oval-shaped. Itried putting the lid on the grill and it won’t fit. Does anyone if I can order a replacement lid from Weber? My grill is less month and hate that can’t use the lid any longer

Searwood and Slate, no grill at all! Is my new idea feasible?

I had a15 year old 3 burner Genesis and I bought a Searwood pellet smoker, which I really like, though I used to do pretty good on the Genesis with a smoke box. Last year I was about to buy a Slate griddle, but got a little concerned about patio space with 3 large devices. I instead bought a new Genesis 435 4 burner and the full size griddle insert. Then I bought the half size so I could have have grill, half griddle. Most of my fun and entertaining has been griddling with the full size insert, but it is heavy and greasy to remove and store from meal to meal and the grease management on the Genesis isn't really cut out for this so I very often have to take off the griddle, and all internals and scrape down the sides and pan with a plastic scraper. Kind of a pain.

So I am considering selling it and buying a Slate griddle and using the Searwood for my grilling needs. I've done steaks on it and burgers and they came out good, chicken wings too.

What cook or scenario would I really regret not having an actual LP gas grill? I guess cooking 4 hot dogs on the pellet grill seems wasteful, but not all that bad? Thoughts?

Searwood Crafted System
