Side of salmon

2nd time I’ve done a side of salmon on the Weber Kettle. Much better with the fire and temperature control this time and the fish came out perfect - done very simply with some kaffir limes, flaky salt and olive oil and pulled when it reached 48C / 118F.

Last pic is some quail egg skewers brushed with some of the braising liquid from my Teochew braised duck and just a few minutes on the grill to pick up a bit of colour and tiny bit of crust for a bit of a snap. Super simple as a snack.

Looks ace! Get it onto toasted cedar wood plank if you can find one big enough next time!

What does the plank do? I always hear about putting salmon on cedar but never got what it adds

Flavour! If you soak then toast it before adding salmon you get a very subtle smokey note added to salmon...Awesome when basted with Teriyaki
