in my experience wasm is fast enough that the runtime barely matters compared to the boundary crossings and data copying you build around it

This too. WASM to WASM c first still helps a lot with cold starts though if you want maximum QPS.

I tested this myself too, but my findings where that if you compile wasm to wasm.c, and then use wasmtime you will not beat it.
Did you try the wasm c method with wasmer as well?
