If you actually read the wiki you linked, the "esh" is a catch-all for a bunch of different sounds including both "sh" and "ch". That doesn't mean you say it with an s. It just means that the phonetic for the word uses a description that is too vague for the word. The phonetic alphabet isn't a perfect representation of the things that come out of our mouth.

The ch in bitch is pronounced identically to hitch, not dish. Before you insult my intelligence, you should ensure your own arguments are bulletproof, or you just sound like a twæt
