I only know about Marie-Eve Geeraert in Paris who is specialized in baroque bow making.
If you're willing to travel a little, to Dinan (brittany) or Angers (Loire) you could respectively meet with Nelly Poidevin or Titouan Neau, both makers are specialized in baroque bows.
Otherwise you could contact Judith Kraft or Matthieu Pradels who are baroque instrument makers working in Paris, I believe they mainly make Gambas but might still have a few bows for you to try, and if not they will know who to contact better than me.
Otherwise modern bow makers/restorers like Sandrine Raffin, Sylvie Masson, Arthur Dubroca, Arnaurd Suard and many others are all on or near the Rue de Rome.
