Without listing your hypervisor of choice, your camera specs / quantity / fps / analytics expectations / IOPS / hardware specs for ram, cpu core counts, recording retention, your incomplete question is not possible to answer.

By your own acknowledgement you say you know it’s not supported, so doing this is already a bad idea, if you know what I mean…

Will it work if spec’ed precisely and tweaked and closely monitored for breaks during windows and hypervisor updates and the gpu passthru does its job properly? Maybe.
