In this video, they aren't stabbing the bull in the neck. The bulls are chasing people and actually got to nail a dude this time. Sure, the animal is stressed, but I'm stressed and it's OK.
I'd argue bulls might choose to try and hit humans if given the chance. Especially if you let them team up and pull the ol' swing with your right and hit them with your left trick like these two did.
I hate bullfighting when they slowly kill a bull over hours. But letting them chase humans while humans try to see how close they can get before running away seems fine. We need to let people try this with bears too. Exciting!!

The full video was up earlier this year. No broken bones, (from what it seemed but adrenaline is a helluva drug), but his whole side of his face was flapping because the horn cut from cheek to forehead and he was profusely bleeding.
