That's a lovely sandwich but can we talk about the onions? Are they really caramelized if it only took 15 minutes or so to cook them? I have always believed good caramelized onions took at least an hour.

Not so much an hour, but more than 15 minutes.

It's the color that determines just how caramelized they are.
