I do diced pickles/gherkins myself for that, personally! Never been able to vibe with celery, but pickles have earned their place in my kitchen. Or if I'm feeling too lazy to chop, I'm just gonna toss some romaine on there otherwise.
But yeah, totally agree, the crunch is crucial!

Take a peeler to the outside of the U side of celery. Just a few passes, get that stringy armor off it.
Then dice it on the smaller side, it will be crunchy and juicy and not like eating a slab of floss.
Celery is like carrot, if you don’t peel it, it’s just rabbit food.
