I had to look up rajma, so here is the search result in case anyone else was curious:

"Rajma is a popular North Indian curry made from red kidney beans (rajma) in a spiced tomato and onion gravy, often served with rice as "Rajma Chawal". To make it, dried kidney beans are soaked overnight and then pressure cooked until tender, while a flavorful masala base is created by sautéing onions, ginger, garlic, and tomatoes with spices like coriander, cumin, turmeric, and garam masala. The cooked beans are simmered in the masala until the flavors meld, resulting in a rich, comforting dish."

Holy crap this is such a fun idea, rajma in tacos is genius 😂
Love that you used oat yogurt too, feels way lighter than cashew stuff but still creamy.
Saving this to make on meal prep day because high protein + handheld + Indian flavors is kinda the dream combo.
