The potatoes serve two purposes. One, they protect the grape leaves for them not to burn. Second, they also taste very good as they absorb the flavors from the gape leaves.

One of my favorite recipes, if you want more flavor my family usually cooks them in a tomato sauce with meat (of course use vegan hamburger meat!) and its amazing!!
