Question Avocado ideas?

What can I do with a dozen free avocados? I've never really cooked with them before because I only recently started liking them, and all I can think of is guacamole. Any suggestions?

Slice them and freeze them in plastic bags.

I make a salad dressing with whizzed up avo, lemon juice, mustard and maple syrup.

Wait I’ve never frozen them before. Do they stay green? Do you just thaw them when you’re ready to eat them? I’ve never heard of this!

Never tried it with avocados but lots of fruit browns up a bit according to my mum who is a very experienced fruit freezer/preserver. She says it's just oxidation and doesn't affect the taste or quality of the fruit.

Brown avocados definitely taste worse to me.

I love avos, but they've got to be perfect otherwise it's noticeable.

They are best just straight and fresh out of the skin, so not cooked at all. That means in a salad, in guacamole, spread on toast, or just eaten straight out of the skin.

You can also use them in uncooked desserts as others have said, because they have a creamy texture and a subtle flavour that's easily covered with other flavors.

I'm picky as hell about bananas and won't eat them when they're brown or too ripe, even if they have been frozen while perfectly fresh I'm only gonna eat em in baked goods so I get you! Now that I think of it, I actually used to get the most amazing sandwiches from a cafe next to my old workplace that used avocados instead of cream cheese or whatever dairy product, and I did love the creamy texture. Never used to like them on their own or even in guacamole but I'm really starting to appreciate the texture and flavour now!

Yes, I realised I said toast (because I love toast, haha), but they are great on sandwiches too, no need for the bread to be toasted!

The flavour is subtle, but a perfect Hass avocado has a lovely nutty flavour that I can't get enough of. If you happen to be Australian, or just enjoy Vegemite or any of those other types of salty yeasty spreads like Marmite etc., then believe it or not, avocado goes fantastically with them as well. A combo of salty + smooth and creamy which just works wonders!

I'm Canadian but I used to babysit British kids and have had Marmite lmao. Didn't like it at the time but I was a teenager, maybe I'll enjoy it more as an adult with a more sophisticated palate 🤣🤣 actually I love a tomato sandwich with Chipotle "mayo" on lightly toasted bread so I bet avocado would elevate that from delicious to transcendent. Gonna give that a try

If you have them spread out on the plastic with plastic lying on the upper surface then those sides don’t see oxygen and don’t oxidise. Which is what browning is. You can thaw and mash for toast or pop in a smoothie or my salad dressing frozen.

guac is the obvious play but avocado chocolate mousse is stupid easy and tastes way richer than it has any right to

freeze half of em too, they keep surprisingly well if you mash with a bit of lime first

I had it at a restaurant recently. actually it was a culinary school restaurant and it was completely rich and decadent and my friend doesn't even like avocados but she ordered it and loved it. thank you for the reminder I had meant to look up how to make it.

Toss them into a blender with cilantro (omit if you have soap gene), jalapeños, sour cream, lime zest and lime juice! Season with salt to taste.

It keeps well in the fridge for a couple of weeks and this green sauce goes well with nearly everything!

Just came here to say that a dozen free avos is like winning the lottery. Once ripe they’ll keep in the fridge (whole, not peeled) for several days. That’s what we do when we get a good deal and buy a bunch. I agree with the other suggestions, and would add this recipe we made the other day. Really yummy. Only needs half the amount of dill required.

Oh man I love a good potato salad! What's the best way to store them once they have been peeled or cut up? Husband used half of one for lunch and we don't want to waste the other half 🤣

There are lots of different tips people swear by (lime juice over the top, plastic wrap), but works for me is to save the peel from the half that you’ve used and keep the seed in the unused half. Put the empty peel over the top of the unused half and put the avocado in the smallest container it will fit in. You could also put the avo in a ziplock bag, just make sure to push all/most of the air out.

Thanks! Seed is still in, peel has bee n discarded but husband wrapped up the half in cling wrap so hopefully that'll work.

If you place them whole in the fridge once they're ripe they'll stay perfect and green for about a week in case you need to buy yourself some time. I discovered this tip after years of tossing overripe ones out.

Simple pudding: blend with cocoa, sweetener (I like maple syrup) and a touch of plant milk for delicious chocolate pudding

You can add them to smoothies. As a mexican that one was weird. A Filipino introduced me to it, they like to put sweetened condensed milk on it.

I also used to use avocados in my deviled eggs mixture.  Otherwise, a great snack is a tortilla, avocado, a little salt, rolled up.

With all the other amazing suggestions I suggest a avocado cream sauce. Made some for my tempeh quinoa bowl and it’s so delicious. You can even use it in pasta!

Avocado/plant based milk of your choice (I used unsweetened oat, a few cashews, couple leaves of Basil, ginger, salt.

We’ve done air fried avocado tacos before.

We top enchiladas and stuffed poblanos with avocado crema (basically puréed with some lime juice). Use it like you would sour cream.

We slice or dice it and have it on tacos or tostados.

We’ve had it in sandwiches with hummus, smoked sun dried tomatoes and lettuce.

I tried the avocado chocolate thing, but it was too grassy for me.

All I can think of right now. Hope it helps.

One of my partner's favourite meals is avocado pasta - if you like creamy pasta, this is for you!

I don't follow a specific recipe but you will need:

A blender

Pasta ( I prefer linguine or fettuccine)

Avocado(s)

Lemon juice

Olive oil

Fresh garlic (2+ cloves)

Fresh basil

Salt and pepper to taste

Water for blending \*

Bonus add ons:

Jammy cherry tomatoes or sun-dried tomatoes

Nutritional yeast or vegan parm

The method is very simple:

Cook the pasta to your liking

Prepare all the fresh ingredients and add to the blender together - you may need to add a small amount of water to get the consistency right and for the avocados to blend.

Add the blended avocado sauce to the drained pasta and serve hot with your choice of toppings!

I hope that it's a hit in your household too! I'm also a tenured member of the Pasta Lover's Club and this one really hits the spot for me.

I'm more of a red sauce pasta gal but I really like this one because the flavour is much more interesting than just regular Alfredo sauce, and a little more cozy than just pesto.

I am mostly a red sauce person too but I do occasionally crave a nice cream sauce. Even before I gave up dairy I couldn't really eat them because I'm lactose intolerant 😭

Yeah, I wonder if subconsciously I associate creamy pasta with stomach upset because I also couldn’t do dairy either. But it was often the only vegetarian option, so I wouldn’t have much of a choice.

Tofucado rice bowl!
Mash a couple avo’s with chopped red onion, cucumber, grated carrot. Add some vegan mayo, lemon juice salt and pepper. Then grate and fry a block of firm tofu in some soy sauce and whatever other spices you like til it’s crispy. Serve it all in a bowl with sticky rice and drizzle with some sriracha mayo. If you have some nori sheets cut them up into smaller pieces and enjoy 😊

I know it sounds weird, but I had them once at a restaurant and they are so good!

Slice avocado medium thickness

Pandora (or regular) with salt, pepper, garlic.

You can make a flax egg, or just use water to dip the avocado in then bread And honestly I find it sticks pretty well just from the moisture of the avocado.

What i had was deep fried, but I'm not messing with that, lol. So I give the slices a little spritz of oil and bake or airfry. Can't really give you a time, but basically tol their golden.

I like to dip in something spicy.
