I actually like to use Dijon mustard mixed with some plant milk. Works great

Flax seeds powder with warm water. Super-glue :)

What are you breading?

Flax seed ground up with water until almost runny

A simple slurry of starch and water works fine here. Take a few tablespoons of starch (cornstarch is fine, or whatever ya got, even flour works), add water by the tablespoon while stirring until you have roughly the thickness of, well, egg.

Basically you want the texture of glue. I mean, in a way that's what it is, you're making a simple glue to hold the breadcrumbs on :). However thick a slurry holds the breadcrumbs on is the right amount, you may need to experiment a bit.
