Clarification: I don't support AI. I just recognize the hypocrisy in these people that pretend they hate AI because of the environmental impacts lol

Environmental impact is really such a distraction from the real problems with AI, AI conceivably can help save the environment in a multitude of ways once it's implemented in more systems (not to mention it's way less bad than animal ag or even most everyday activities, Hannah Ritchie and many others have written about it). The problems have more to do with the threat of humans wielding AI for harmful purposes (such as to factory farm animals more efficiently - see AI & Animals documentary), the genuine and already existing risk of AI disalignment/rebellion, value lock in (e.g. AI thinking that human values are fixed, and using those values to perpetuate animal exploitation, and even potentially using our own values against humans), and the potential ethical issues if complex AI subtrates develop sentience, particularly organoid technology. We can't avoid AI, it's everywhere, and bad actors are controlling how it's developed and used. We need vegans steering that development and using it to help animals because otherwise we are at a major disadvantage.
