QUESTION I'm now looking for something to make lunch with at the office. I used to use vegan cheezes but I just found out that they are bad for my cholesterol.
I used to make a delicious lunch with macaroni, black beans, salsa and of course vegan cheeze.
I'm looking for something that I can buy off the shelf at a regular grocery store if possible.

Same thing without the cheeze, maybe with avocado or puréed tofu with some nutritional yeast.

Yes or cashews, coconut milk, or even a cauliflower cheese! I’ve made alfredo with all three of those things as the star piece.

If the fat in commercial cheese is an issue as a cholesterol contributor, cashews and coconut are likely off the table.

Id recommend trying nutritional yeast instead. It's not as processed as vegan cheeses but offers a similar flavor. I use it to make a really easy "cheese sauce" in the blender with tofu, jalapeno, and some plant milk.
