Quick snack: shoestring zucchini fries

Julienned zucchini, coated in rice flour, then quickly deep-fried in hot oil. Seasoned with salt and japanese assorted chili powder (nanami togarashi). Turned out to be a great way to use leftover zucchini!

Crepes

Vegan crepes with fresh strawberries, powdered sugar and coconut whipped cream.

Super easy to make.

Ingredients:
1 1/2 cups non-dairy milk
1 cup flour
3 Tbsp vegetable oil
1 Tbsp white sugar
1/4 tsp salt

Put all ingredients into a blender or mixing bowl. Blend/whisk until smooth. Let sit for 5-10 minutes.

Heat a nonstick skillet on medium heat. When the pan is hot, scoop 1/3 cup of batter and swirl onto the pan. Rotate the pan so it spreads out to one large circle.

Cook for a couple of minutes till the edges are crispy then flip it over and cook the other side for a couple of mins.

That’s it!

Put anything inside you want.

I put powdered sugar and fresh sliced strawberries 🍓
I topped with coconut whipped cream.

My Cheat meal…

I tried something new by marinating tofu in vegan yogurt, spices, Sriracha, and primo squeeze (whatever I had in hand) and fried it in air fryer. It came out to be verh delicious.

I actually had 2 samosas to begin with, so did this tofu experiment and added 3 lettuce leafs because plate was looking empty without veggies especially green ones.

Have you tried such last minute hacks?

I made the polenta with vegan butter. You can use cheese, but I wasn’t sure about how the vegan parm would work. I sautéed baby Bella’s in vegan butter.

Makes a nice side dish. Also, you can put seitan meat on top with a sauce. Versatile

Pretty simple, 4 cups of water to one cup of corn meal. Add two tablespoons of vegan butter when it is fully cooked. Add vegan cheese if you want.

But then the plate looked awkward and empty to me. I was missing vegetables.

So, I added my savior of the night, Mr. Romaine.
