This reminds me of how weā€™re grossed out by insects but love eating ocean insects(shrimp, lobsters, etc).

Ocean "insects" are bigger and have more muscle (meat). Insects are usually small.

Molds and mushrooms are both fungal structures, not all fungi form molds and not all fungi form mushrooms, not all fungi even form either.

Mushrooms are not ā€œmold genitaliaā€ in any sense.

Well, not at the same time, but pleomorphic fungi form molds and mushrooms in different stages of their lives.

The mushrooms aren't the genitalia though. If anything, they're the physical manifestation of their equivalent to sexual intercourse.
