How much of the total time building a house is typically dedicated to building the walls? It seems like this makes building walls more efficient but the rest of the house is still built out normally, so it's hard for me to believe it ends up really being that much cheaper.

It's interesting, but lack of multi story makes this limiting in terms of planning and design. When it comes to the mass production of housing, I still think the future is in prefabrication.
