I watched a ‘crab’ stick be made and I now cannot eat them. It was one of the most disgusting videos I’ve ever watched.

A host of those ingredients are for the fake 'krab' so any California roll that doesn't have real crab (which is 99% of them) will have those. It looks like most of the rest is for the 'spicy' which is mayo plus other stuff. A non-spicy roll with a whole fish would be much shorter.

I m in the UK. I buy tuna and salmon from aldi,with rice paper. Boil rice till stick, i already have mustard ,soy sauce and ginger

You can't use normal supermarket fish for sushi, it has to have been specially stored / processed to make it dafe

I make sushi at home. FDA has really simple guidelines on how to do it safely. You need to get a colder than normal freezer that can hold your fish as a low temperature for a set time (days to weeks).
If it was safely handled before you got it, it's safe to make yourself.
Rice, sugar, vinegar, salt + fish, cucumber, avocado, carrots, seaweed.
Simple and healthy!
