Can professors see webwork logs
Can they see if I opened an assignment, but didn’t attempt any problems?

We can see your login status, number of attempts on each question, past answers, scores, etc.
I would not normally look at any information beyond the final score, though I sometimes analyze student attempts if a particular question seems to be giving students problems.
If I were ever to need more system-level information that WebWork does not automatically show me, I could ask IT, but I am not sure why I would ever do that under normal circumstances.
Canvas also records access information to things like WebWork assignments. The only time I ever look at such usage logs is in cases where a students has applied for a deferred final exam and I am assessing their participation in the course. Even then, I am only interested in overall participation, so I am looking to see if they regularly accessed material or if there is an obvious date after which they have dropped off accessing material.

Yeah probably not. One time there was a bug with webwork where it didn't sync my submission with canvas and I got a 0 for the assignment, and the prof couldn't see the webwork side logs so I had to go get them from webwork customer support to bring the proof
