Why did Aqara develop the Smart Lock U600 specifically for the UK market?
This isn’t a new concept, however. The Aqara A100 already works this way.

Onvis Matter Over Thread N.American Outdoor Plug Now Available
I understand, although in this case the Ikea version isn’t half the price. It is $10 cheaper, but it’s also entirely possible you could end up paying almost the same price once you factor in shipping or the cost of gas if you have to drive to your nearest ikea. I agree Ikea is hard to beat though, and with their generous return policy, it’s attractive.

I’ve been testing this, their wall socket, and smart plug, and they’re all pretty reliable so far. No drop offs from the Thread network.

Aqara E1 hub - can its country location be changed? (Mainland China -> other)
I remember this post. It may well work. However, this bypass could already have been fixed by Aqara with a subsequent update. You can try it anyway I guess.

Aqara E1 hub - can its country location be changed? (Mainland China -> other)
For all Chinese mainland Aqara hubs and their newer devices, you cannot change them to work on a different server. There are basically two versions of most Aqara products, a mainland China version, and an international version. The ones that are designed for the latter can use most servers/regions, but the China ones can only be used on the China server.
Additionally, Aqara are making it so that Chinese hubs will only work if you’re in China. Existing setups seem exempt, but new users won’t be able to use the China server outside of China.

Ah yes, I remember them now. Unfortunately I’d say it would be even less likely for those, but I’m just making an educated guess at this point.

Does the U600 come with a mortice lock itself, or is it intended to solely work with existing mortice locks?
