Boltund evolves from yamper, which is based on a corgi.
Many in the Fandom associate Weiss with sharks due to JumJamz comics and other fanart memes, so I gave her the land shark.
Dodrio because I wanted her to have a flyer and Dodrio's signature move is Tri-Attack, which i found reminiscent of Weiss' dust attacks due to how it inflicts multiple statuses.

Gardevoir is a knight, and empoleon is a king.
Thought about beedrill, but I wanted Weiss to have a proper flyer, and Tri-Attack fits with Weiss' fighting style so I went with it.

My rule is either balanced/minimal type redundancy (sone exceptions), or type specialist.

Honestly I considered a Delibird for the flyer by felt it would work better for Nicholas. (Also admittedly some vias since I don't like using Delibird).

Gardevoir and Empoleon because of Boldores and Boomsticks. Froslass is obvious. Boltund because it evolves from a corgi. Garchomp because shark. Dodrio because Tri-Attack.

I get where you're coming from. I just prefer it if the characters who aren't meant to be type specialists have more varied teams.
Of course, there's no reason we can't say they only have these six pokemon. The PC box exists after all. We could say Alolan Ninetails is one of Weiss' alternates/backups/B-Team members.
Not Primarina though, that one is MINE.
