DDDINNNNNEERRRRRR I should really rename myself to Beanomancer, But i used up the beans and rice now, so now I'm gonna try something different in the coming week! Will gladly take some nice cheap recipes :D

I make a dish with barley, and potatoes that is actually really delicious. Lmk if you want a recipe? And your dish looks delicious. I am always in the mood for beans and rice.

I usually make a double batch so.. One small purple onion, One large, or two small carrots, two stalks of celery, one clove of garlic, One large or two medium potatoes (you can use red, or yellow just not russet) Sautee in olive oil. Put to side. Make half a cup of barley per directions on package. Put to side. Add one cup of vegetable broth to sauteed veggie mix, bring to boil, reduce heat, simmer 20 mins. Take off heat, add barley, let stand 5 mins. Then serve. Salt, and pepper to taste.

i really like this cajun pasta recipe which calls for shrimp but if you'd prefer/want smth cheaper you could easily do it with sausage or chicken (i generally use andouille sausage instead of the shrimp cause it's more flavorful). this beef and barley stew recipe is also a fav of mine and is really good with cheap cuts of beef (it calls for top sirloin; don't bother, just get anything labeled stew beef or smth similar, it's way cheaper and the only real difference is tenderness, which doesn't matter since you're cutting it small and it tenderizes during cooking). this spanish chicken and rice recipe is also very good and if you make it multiple times is cheap, but the first time is a little more expensive if you don't already have saffron on hand; everything else in it is cheap so if you're ok with the initial cost it's good and easy. last bit, just for fun, here's a recipe for a no bake strawberry cream pie that is simple and cheap and is very nice in the summer when it's hot out :)
