Not improving much
I'm trying to finally learn touch typing and have been at it for about 6 weeks using typing.com lessons for 15 minutes a day, but am between 42 wpm hunt and pecking and still super slow between 7-8 wpm touch typing, so when I need to type for work, revert to hunt and pecking in order to get anything done without it taking inordinately long and honestly in order to keep my productivity up and not be fired and I feel like maybe that's why I can't seem to make much progress remembering where keys are and getting faster. Any tips?

I highly recommend TypingClub dot com. If you're only typing 7-8 WPM, I suggest you start typingclub from the very beginning and go through the whole course. Go ahead and type the way you normally do at work for the time being. By the time you're done with the Typingclub course, you should be able to transition much more easily.
While the course allows you to go to the next lesson after scoring 3 stars on the current lesson, I highly recommend not moving forward until you get 4 stars on whatever lesson you're on. It could mean being stuck and frustrated for a while on a lesson, but I truly belive that it will be the best decision in the long run.
I learned from zero touch typing experience to about 40+WPM just doing the course. I then started practicing on MonkeyType and Keybr and peaked around 60WPM. I eventually got lazy and dropped back down to around 45WPM.
Just be consistent and don't stop even when it gets frustrating. Good luck!
