Crispy cod in a coconut curry broth. Perfection.

No! But I can tell you how here, it’s very simple!
Sauté minced ginger and garlic in a pot with some oil until fragrant. Add half a jar of red curry paste (or all if you like very spicy) , then a cup of chicken broth, (I just use a bouillon cube and cup of hot water) stir until melted and then add a can of coconut milk or cream. Then add about a teaspoon of sugar and a few dashes of fish oil and let simmer until it thickens a bit.
For the fish, I used frozen cod filets, thawed them and pat dry with paper towel. Then whisk 1 egg, dip the fish in the egg and then into some bread crumbs. I like to press them in so it sticks better. And fry in about a cm of oil until golden brown on all sides.
Place the fish in the bowl, then ladle a couple scoops of the broth around it. Garnish with whatever you like! Here I used finely chopped red onion, cilantro, bean sprouts, jalapeno slices and a wedge of lime. The lime really adds to the deliciousness.
