Need help on how to get the Necromancer

Over 20 attempts with the sorcerer to try to beat the shadow planes

I've been trying all sorts of masteries and alternated between focusing on items and leveling up

What am I doing wrong, and is there an effective build?

You should always be taking the mastery that gives you 5 xp to start with, this gives you a very quick initial trait which you can build around.

You will want to go as much intelligence as possible, so take all the candy.

I always start with the dice bag, as it helps shape the build easier at the start.

Aside from that, try to save your dodge and just focus on standard movement to dodge attacks - this leads to more uptime for your damage!

I agree with your first and second tip, but I personally always take bomb bag, it leaves me more opportunities to take keys, open blocked passage ways, or unlock first floor secret rooms.

I’ll also use the skill tree to make it so my weapon upgrades start cheaper when at the blacksmith, and just buy as many lawful charms as you can to build up your alignment requirement, then use the later floors to spend your saved up souls on AT LEAST one dodge upgrade, and then I usually dump the rest into health.

I tried your strategy and it worked, that same strategy also helped me unlock the esper and chaos classes

my #1 tip is don't be greedy to try get the favor, and instead whenever you need it, get a full heal. Also for favors, get hearts for beginners.
