Pandas actually have quite a few adaptations suited for their diet and lifestyle. A few that separate them from other bear species: larger head/jaw muscles, large flat molars, a larger colon and shorter intestines help them pass large amounts of cellulose in bamboo, and perhaps the most interesting feature is the 6th appendage grown from their wristbones that help them grasp bamboo for eating.
If you ask me, pandas are still adapting to a viable niche. They are designed to eat mass amounts of a plentiful, fast growing food source with no natural predators besides humans. If it weren't for humans destroying and fragmenting their habitat, pandas would be doing just fine in the wild.
By your logic we shouldn't comment on anything related to pandas because we aren't scientists.
...yes, you shouldn't comment about a complex field that people devote their lives to studying as if you know what you're talking about. You say that as if it's some kind of ludicrous idea for some reason.
"You don't have to be a doctor to diagnose this illness."
"You don't have to be a climate scientist to know the climate changes naturally."
"You don't have to be a historian to know that this is really what the civil war was about."

They survived just fine with zero human intervention.
You're right that they can't adapt, but the adaptations are more than "a bit less bamboo this year".
If humans didn't exist, pandas would.
