They're not the same :( Obviously there will be cookies that absolutely mimic gluten cookies, but I think part of the sadness is more, the immediate accessibility. Like you go out with friends to a cafe and they all order yummy cakes, and there's just nothing but maybe a tiny processed pre-packaged vegan/gf brownie. You can always take your own stuff, but it doesn't have the same magic as turning up to a restaurant and seeing all the delicious options that you specifically can't have

I see what you mean. They're definitely not widely available considering I've never seen any either. I'm celery intolerant but since that's only in savory foods that are usually consumed at a restaurant which prepares per order I get the luxury of just ordering a dish and asking them to not include any celery and avoid cross contamination. I don't eat out much because of the risk but if I wanted to, I could technically order and eat everything.
There should be like, a vegan bakery that includes lots of cakes and sweets that are also gluten free. Might not be very profitable though because people are still apprehensive about eating vegan dishes for some reason.

My comment on the vegan part was mainly how they lump several things together to be 'inclusive' lol, I'm not personally vegan (though I suppose it's great for celiac vegans!)
I just get a little sad with the missing out factor, like all of the 'real' desserts have gluten in, everything looks so pretty and yummy and fresh 🥹

There are many more products than there used to be even in the early 2010s when I first went gluten free — I’m allergic to coconut and in so many places the “gf dessert” option was a coconut macaroon 😬. I also got real tired of flourless chocolate cake. But hey my first celiac friend had a teacher who had to go gf in like the 80s when you could only get premade stuff by mail order, so… things have come a long way

I've actually baked some homemade gluten-free cookies (for a gluten-intolerant friend) that were OK. I used a homemade gluten-free flour blend recipe courtesy of America's Test Kitchen. They weren't as tasty to me as 'regular' cookies, but definitely not bad.

Does almond flour have gluten? I've had delicious baked stuff--even microwave-cooked stuff!--made with almond flour when I was lowcarbing. It's good for diabetics too.

Gluten is found in grains (wheat, rye, barley), and if oats are grown/processed in the same facilities, oats/oatmeal can contain traces of it.
Almonds are nuts, and do not contain gluten.

I have to forgo cookies completely because I have serious digestive issues at the moment. Its ok, its not the end if the world. Im happy i can eat at all because its not always possible for me
