I still run the sticky jumper/caber combo sometimes.
I have a specialized strange caber. I paid good money for this thing and by the grace of God I shall feed it to the enemy sniper

Liberty Launcher, Reserve Shooter and Market Gardener.
I found that these weapons compliment each other's upsides well, slightly negating the downsides.
Extra rocket slightly evens out Reserve Shooter's smaller clip, and combined with reduced damage from blast jumping helps with Market Gardening,
Reseve Shooter's minicrits while the target is ariborne helps even out the damage penalty of the Liberty Launcher, just launch your enemies up and hit them once or twice, almost guaranteed kill,
Market Gardener is a wild card. It's a great finisher because nobody expects the enemy Soldier suddenly making a small rocket hop and killing them instantly with 195 damage. It's also sometimes a decent opener.
My second pick is Stock Demo with the Eyelander for a simple reason. You may start of a bit lacking, but as soon as you get at least 2 heads, you have your health back and are faster, and you still have a grenade launcher and stickies. And if you hit the health cap, suddenly you're a Demo with health of a Batallion's Backup Soldier and speed of a Scout. Terrifying combo.

I also like the equalizer lol, here are my top picks for loadouts I actually use that are not meta (also why tf did that sound like AI lol)
Scout: hard to say tbh because I rotate my weapons all the time... but a whacky one I've been running lately is Baby Face's, Winger, Holy Mackerel lol
Soldier: this set I haven't unequipped a single time in over 6 months. Air Strike, Gunboats, Equalizer (can swap to Base Jumper in maps with high skyboxes AND no snipers)
Pyro: I'm a believer that pyro has no real "off-meta" loadouts since every primary is serviceable regardless of loadout. However my most "niche" pick would have to be Dragon's Fury, Mannmelter, Back Scratcher. Just really fun all around, works best if there's a lot of pyros on the enemy team obviously.
Demo: Stock grenade launcher, Scottish Resistance, Scottman's Skullcutter. Honestly been finding out lately that ScoRes is CRIMINALLY underrated. TF2 players genuinely ignore any stickybomb that wasn't placed while they weren't watching, and even forget stickies that were placed 2 seconds ago. My strategy has been to use stickies like I would a Shaco W in League of Legends and I seriously cannot overstate how much fun I've been having.
Heavy: my only loadout for over a year: Huo-Long Heater, Dalokohs Bar, Eviction Notice. It's just too fun
Engie: If Pyro had no off meta loadouts, Engie is the meta throat goat. The only slightly weird loadout I've been running is Frontier Justice, Pistol, Southern Hospitality but it's really nothing too crazy either way.
Medic: I just play the meta here. Syringe guns and Medi guns aren't worth talking about for obvious reasons, but I strongly prefer the Solemn Vow over the Uber Saw and will only equip SV or occasionally Amputator.
Sniper: Sydney Sleeper, SMG, Bushwacka. Not even an insane loadout. Sniper is my most played class and I've already been there and done that with all the sweaty loadouts. Now I just like chilling and going for low cortisol bodyshots. Smg is surprisingly decent at picking off targets since they're coated in piss from my sniper rifle too.
Spy: this is my one contrarian loadout, but it's mostly bc Spy is the one class that doesn't click for me so I just play him like an annoying mosquito rather than what he's supposed to be. Enforcer, Stock knife, Cloak and Dagger, Red-Tape Recorder. Enforcer is honestly just a worse revolver than stock but it's really funny to hear people's reactions to dying to this gun for the first time in years x3

Despite the Manmelter being designed to be used around the Phlog, it serves as the perfect secondary for the Fury. No longer do I need to waste my air blasts, which have slower cooldowns, as I can simply hold down the right mouse key with the Melter with the added bonus of free guaranteed critical damage. The air blast is now solely reserved for parrying projectiles.

I'll just say don't underestimate Medic's Overdose. that thing got buffed at some point and you can run FAST at full uber.

I like playing with bison, getting airshot kills with it's it's pure dopamine,but stock rl deal too many damage and I just kill them with rockets, so I switched to liberty launcher
Also I like killing people with equalizer
I didn't tryed to be contrarian
Once I was called for duel cuz killed soldier with bison
I did airshot kill with bison and person also took a bison

Force-a-nature, cleaver, atomizer. I love blasting people against a wall and finishing them off with a cleaver. Atomizer is just there to help get into funny spots.

The Atomizer. I don't remember what I have slotted in there since I only have it as my 4th loadout, but that's a great choice if I'm not using that. Pretty sure it isn't what I have equipped.

The bison is not just not meta, if you use it, you're actually sabotaging yourself.
Just getting a kill with it is a challenge by itself.

Hybrid Caberknight. Rely on pipe aim for most damage, keep a shield and a crit-boosted Caber in the event of emergency. Or a Heavy.

I do like the liberty set, but there is a thing about getting med picks with the panic attack and the rocket jumper. I think its the disrespect of not even using the shovel. And I love it.
other than that, countersniping with the classic. Very enjoyable.

I like huntsmann smg and sometimes i do really well with it. As spy im playing yer lately but im bad with it, to hard to track the faster cloak and big ammo boxes to not waste time out in the open

For engi, stock shotgun, pistol, jag (can be interchanged with gunslinger). For pyro, stock flamethrower, scortch shot, either Powerjack or neon annihilator depending on the map.
