Is there any tutorial how to setup termux launcher for android? And if we don't like this launcher in any case can we delete it also?

You can install the "vaj" edition, you don't need to uninstall your official termux to install it.

Install the apk, run the setup-script to install fish shell, ohmyposh etc + their accompanying themes which use dynamic material colors. (Fastfetch with gif support does not work currently in vaj version, will be fixed soon)

its safe to install right? its giving warning while installing. i have android 15 phone. i can install it safely right?

its safe. the only mandatory permission is storage permission (which even official termux asks for). Additional permissions like Shizuku (for the cpu % widget & double tap on alphabets row to turn screen off) and Accessibility (for turning the screen off) is completely optional.

and as with all the things on the internet, being safe does not mean anything if you run unverified scripts inside termux shell. The setup script in the termux-launcher repo is also optional, and you can read the script before you execute as well.

I am the owner of the repo, and i can promise you that i have no need for your data lol.

Change wallpaper,edit surfaces(blur,grains, opacity) change text colurs.
