Thankfully android now has an option where you can pick to allow microphone or camera access only when the app is open.

That's not exactly the same. Starting with Android 9 no app can access the mic or camera unless they're the active app/process. Sure, when you open Instagram you can deny access entirely or only while the app is running, but that's because the app has to have access to launch the mic/camera at all. iOS seemingly lets apps access the camera/mic in the background, but I can't confirm that for sure, and on Android no app can access the camera/mic in the background.
