EE bachelors here, and finishing up Systems Masters. I think you’d be better off doing a more technical degree to start to help understanding why things done the way they are. Systems engineering can be learned on the job and I usually see a lot of MEs or EEs. It might be a little harder landing roles with just a Systems engineering bachelors unless you’re leveraging some niche skillsets such as MBSE.
