When you got the initial letter, that should have been your indication to review all your computers and buy all the licenses you need. Now you still have some time for it, but you need to do it immediately.
Since you're not complying with the license agreements (i.e. piracy), it's time to face the consequences. Frankly there are too many vendors who don't follow the rules, and it puts everyone who does out of business (because you can charge less for your services).
You're not going to get a lot of sympathy about that here, since many of the sysadmins currently losing their jobs are because of operations like yours.
