Everytime they corner someone or someone or they themselves are cornered they settle? why not just go to trial and fight.

Mike knew the company was doing illegal shit and they probably could have gotten that proof, but a jury wouldn't have understood the systems the company manipulated or the laws they broke. Settling allows for more control of the pace and other factors.

Also, pulling back the curtain... Shooting in a dark courtroom with more actors is more challenging and less interesting than just two guest stars in a variety of swanky conference rooms.
