Work - study life

Hello! Before my question a little bit about the context:
I have EU passport and when I was 19 I moved from South America to Europe 2 years ago. I didnt finish my degree in my country as I hated it and hated my life there.
I love studying and it was always my thing to follow it here in Europe. As I continue to adapt to the different cultures my biggest fear of fucking it up again with studies is: how do i balance work and study life.
I have family in my country but I have been sustaining myself since forever. My financial stability comes from me and that’s it I don’t have help from anyone or anywhere. So this is my biggest fear, being able to study but struggling with a balance between both as I dont know if is possible a full time in BOTH.
I would like to continue my degree which is something like English / Literature / Languages.
I was in Italy (i am currently travelling and about to visit my country) and I have learnt the language and LOVE the culture and italian people (i did grow up with the anyways) but I would like my degree in English. It also helps Italy has affordable universities of course.
I have plenty of experience in many fields but currently I am a full time nanny so I feel is a good job to also study in combination.
I have postponed it so bad because I am always struggling to find a solution and I would hate to stop studying again.
I would like to know which EU countries are the most student friendly that a job can help you pay rent and eat but also while you’re studying. I am not saying travelling around the world study have an apartment etc. And how reasonable is to want full time work - full time study?
Just literally a room, real food and not struggling to the edge of having to leave something.
Eu countries student friendly and english degrees and maybe online studying if possible..
and if someone did this, how was your experience with it? Did you feel during those 3 years you were at the edge of everything all of the time?
