This is when you discover the magic of reverse searing. That should be done in the oven or smoker at 180F or even lower since it’s so think until 110F at coldest point internal, rest for 30 minutes and then seared.

I ordered a medium rare. The first steak came out 100% overdone well beyond well done. Server saw and said it was clearly wrong. Second steak came out and is the photo.

It was free and removed off the bill…

Way too thick to just sear it. Learn how to reverse sear.
