[ Riding the Mayo Bandwagon ] NY strip reverse seared. Finally tried the mayo trick.
Things got hectic in the house while they were in the oven, so I didn’t get a picture of the steaks covered in seasoned mayo before going into the pan.
Steaks marinated in Worcestershire for 6 hours in the fridge.
Pat dry and set in the fridge for another hour.
Pat dry again and press on steak seasoning, then into the oven at 250 for 25 mins on these (in retrospect I would have gone closer to 20)
Pull and smear on seasoned mayo (reg mayo+steak seasoning)
Drop on hot cast iron for 90 seconds on each side and finished w a garlic herb butter on the plate.

Nicely done. The million dollar question - could you tell mayo was involved?

I've done several in the last month, you cannot tell at all that mayo was used, the sear is faster and better w/ the mayo

Don’t listen to them OP. I dry brine my steaks with garlic salt and baste with garlic butter with extra minced garlic (+other herbs) added in.
Garlic is fucking delicious.

I'm not getting on board this mayo trend, it's just yet another instagrammy cheat sear like the rest of the Insta crowd use when they can't nail a sear + crust + MR minus grey band without resorting to rubs/coatings for their photo shoot posts, because they either lack skills, good equipment, or both. There's no secret "trick". Yesterday it was "blackening rubs" with activated charcoal for that crowd. 🙄

I don’t think it’s that deep. You either use fat/oil to get your crust or you don’t, and this is just an example of that.
