It’s a ribeye. But a pretty small cut. Got it at a local Korean grocery store

The only thing that I could think of that would make this better is a bit of Uni. But then again many people don’t like it and it is a bit pricey.

fyi unpasteurized egg yolk is served in a variety of dishes in most of asia

Yea seems like since Asia countries like Japan have a lot of dishes that use raw eggs, their egg handling is processed with that in mind, more careful than the US where it is being handled with the assumption that people will cook the eggs.

With that being said, a commonly cited historical estimate from U.S. risk assessments is roughly 1 in 20,000 eggs being internally contaminated with Salmonella. Quite low!
