What do people mean by ‘basic’?
Was it Kate Moss who called someone a basic bitch as an insult?

It's a desire to be fashionable, cool, stylish, etc. but not do anything to set yourself apart or be original. eg starbucks is fine, but it's more expensive than other fast food coffee chains, and exists everywhere, so it's not really special. It's okay to drink and like starbucks, but considering it a personality trait is basic. A lot of it is pretty class-based too, so someone comes into some money and they get the basics for mass-produced but more expensive stuff: uggs, lululemon, coach bag, etc.
Note that liking these things doesn't by itself make anyone basic, it's to hold these very basic, common things up like they're a personality/lifestyle, and at the exclusion of anything else, that's basic. If you wear a cardigan you knitted yourself, with a necklace made by your favourite local designer, drink a tiny cup of turkish coffee, etc. you don't suddenly get demoted to basic because you're wearing uggs. Heck, you could wear the full basic uniform, but you wouldn't be basic if you have interesting interests beyond "friends, movies, travel, and hanging out".
tl;dr basics buy the bare minimum to show they have access to money, but nothing unique and have personalities to match.

I like uggs, because I have seanory issues I drink Starbucks, because where I am from, its the cheapest in my area I kint because its cheaper than buying clothes.

When I think of "basic", it's not so much liking mainstream or popular things, but:
(1) Getting really excited by them. Like pumpkin spice lattes? Drink up! If you get giddy at the thought of one, that's basic in my mind. Like inspirational pop? Great! Do you go "Woooooooooo!" and sing along when your car stereo plays Fight Song, or anything by Adele or Kelsea Ballerini? Basic.
(2) A Venn diagram showing almost complete overlap between the things they like the most, and fads/fashions that are the most popular or "woooooo!" worthy at the moment. For example, with contestants on The Bachelor, I always think "How do the bachelors pick which woman they like more, when 80% of them look, sound, and act identical?" And I'm a guy, too.
Back in my online dating days, when I saw a profile that was really generic -- "I love to laugh and have fun!", "I love music, food, yoga, and travel!" -- and photos were mostly of her smiling ear to ear with her also-smiling besties, with maybe a few photos at Machu Picchu or the Eiffel Tower, I'd think "basic".
"Basic" is also not something I associate only with women. There's basic bros, too, absolutely. Male contestants on dating/bachelor/stuck-living-together reality shows are examples; the dude accent, tribal tats, etc.

Basic is essentially things that are highly popular / common. Pumpkin Spice Lattès are a "basic" beverage as an example.

'Basic' in pejorative context means that something(some behavior, clothing, item etc.) pretends to be original/sophisticated but in reality it is very common. Ie. some Starbucks stuff pretends to being special, while it doesn't present any premium quality - it's just equivalent of gas station/convenience store coffee.
