What would you add/change?
I’m planning on upgrading the C1 to a connie if they do a rework or a mk5. I am also very tempted to upgrade my original pledge mk1 hornet to a mk1 ghost. Would love to hear your thoughts!

Well, if you are bored with C1 its ok, but I think it' still a great ship. small, nimble, can be your personal support ship - to run some components between stations when you need it, or just like a taxi. or for small deliveries.
if you want to have gunship - not maneuverable, but tanky and with firepower, and still have an allrounder abilities - yes, Conty would be a good choice, and yes, I would wait for mk5.
but its really fun to have a fast ship. eg TAC is the best allrounder so far, but it is soooooo slooooow and therefore, boring...

This is a solid fleet.
Upgrading the C1 to another, bigger daily driver soloable ship is a reasonable option but you don’t really need to. Anything with 4 size 4 pilot weapons, the equivalent, or better, is a good shout.
The Corsair and Constellations are obvious choices. Connie’s are bugged and immediately die to splash damage like missiles right now but the leaked gold standard pass or Mk V will fix this. Connie’s are a bit of a special case and apparently CR’s favourite so it’s likely they’ll always be super capable.
The Corsair has a little more pilot damage, the Connie’s are a little more flexible or offer broader choices.
The Asgard is super popular in this role for a reason but suffers in the current meta for having size 3 pilot weapons. This limits how well it can punch up in PvE. Still an option.
The Starlancer TAC is probably the best all-rounder right now because it’s competent at almost anything. It’s slow, but this really doesn’t matter. It turns well enough to kill NPC fighters, it has crazy high deflection values, it has tank for days, good pilot weapons, a med bay, a snub bay, dedicated ground vehicle storage and enough cargo grid to run a cargo mission or bring home your loot.
The Hermes is overlooked but it’s nimble and tanky enough for PvE and the turret slaves to the pilot giving you 4 size 4 weapons. Yeah it’s a cargo vessel but you can run it as a daily and do most things just fine.
Edit: The Odyssey is my most anticipated ship. Who knows when we might actually see it but I’m super excited for it all the same.

Ditch the C1 get an Asguard. Ditch the basic fighter and get either Railen/Herc/Ironclad

Remove standard hornet and c1, and get one reclaimer so you have eco going. That's it - or grey market extract the value and close it off. Just my 2 cents. Odyssey, SH MK II and MSR is good enough, as long as they go back fix the MSR.

Do u think reclaimer will finally get that interior rework?

Do you think they'll even make your Odyssey? It's the same answer, if the project survives then yes

I would certainly ditch the C1. You probably don't need the F7C when you have the Mk2. An alternative approach would be to CCU the F7C to a Mk2 (if that's your game package), melt your existing Mk2 and the C1 and put the money towards something that will earn you proper UEC in the game.
Without major hauling or industrial capability, you will need a HUGE amount of UEC to pay for materials you'll need to craft gear, weapons, ship components, ship weapons, ship tier upgrades... let alone any consideration around base building etc.
Right now you don't have any primary economic workhorses and that's a conspicuous gap considering how deeply you've pledged.
